The Serrano Pepper is a chili pepper that hails from the foothills of Puebla  Mexico.  In fact Serranias in Spanish means foothills. The flavor is bright and biting, with a delayed fuse. Serrano Peppers are 2"-3" long and a 1/2" in diameter. Crisp, fresh flavor, it is the hottest pepper commonly available.  Unripe peppers are green and turn a kaleidoscope of colors from red, brown, orange and yellow as they ripen.
